Waffles with Bourbon Cherry Reduction and Vegan Cream

Ingredients
Cherry Compote
- 1 cup Frozen cherries
- ⅓ cup bourbon
- 1 Tbls. lime juice
- 2 tablespoons of coconut sugar
- ¼ tsp cinnamon
- ¼ tsp Ginger powder
Waffles
- 1 ½ cup Waffle Mix(I used Krusteaz Belgian Waffle Mix)
- ⅓ cup coconut milk
- ⅓ water
- 1 banana mashed
- 2 Tbls vegan butter melted
- 1 Tbls hempseed
- 1 tsp vanilla
- ⅛ tsp cinnamon
- Probiotic cashew yogurt
Instructions
Bourbon Cherry Compote
- In a saucepan combine cherries, bourbon, lime juice, sugar, 1/4 tsp cinnamon, and ginger.
- Bring to a simmer then lower heat. Cook for 30 minutes stirring occasionally until cherries are swimming in cherry syrup.
- Add a tsp of water if it starts to evaporate too quickly.
Waffles
- In a bowl mix the coconut milk, water, butter, vanilla.
- Whisk in flour, hempseed and cinnamon.
- Mix until thoroughly combined.
- Let sit two minutes.
- Heat the waffle iron to desired level of brownness.
- Add ½ cup of batter to each iron and bake until steam stops escaping from the sides.
- Stack final waffles with the yogurt and cherry compote.
