Instructions
Bourbon Cherry Compote
In a saucepan combine cherries, bourbon, lime juice, sugar, 1/4 tsp cinnamon, and ginger.
Bring to a simmer then lower heat. Cook for 30 minutes stirring occasionally until cherries are swimming in cherry syrup.
Add a tsp of water if it starts to evaporate too quickly.
Waffles
In a bowl mix the coconut milk, water, butter, vanilla.
Whisk in flour, hempseed and cinnamon.
Mix until thoroughly combined.
Let sit two minutes.
Heat the waffle iron to desired level of brownness.
Add ½ cup of batter to each iron and bake until steam stops escaping from the sides.
Stack final waffles with the yogurt and cherry compote.
