As a perimenopausal food blogger and amateur chef, I’ve discovered that sometimes, only a grilled cheese sandwich will do. But not just any grilled cheese—I’m talking about the ultimate vegan grilled cheese that satisfies those intense cravings without compromising our plant-based lifestyle.
The Quintessential Comfort Meal
Let’s face it, ladies: there are days when a salad just won’t cut it. You know the ones I’m talking about—when hormones are raging, and we need something loaded with complex carbs, salt, oil, and fats. It’s not an everyday indulgence, but it’s perfect for THAT day when comfort is non-negotiable.
VEGAN GRILLED CHEESE WITH CARAMELIZED ONIONS
Ingredients
- ciabatta french or other thick crusty bread
- Violife vegan smoked provolone cheese
- ½ cup sliced onions
- 2 Tbls. balsamic vinegar
- 1 Tsp. honey
- 1 Tsp. thyme or season mix like herbs de Provence
- unsalted vegan or dairy butter
- Extra virgin olive oil
- salt to taste
Instructions
- Heat olive oil in a pan then add onions, balsamic vinegar, salt, and thyme. Sauté until onions are translucent. Add a few tablespoons of water and honey.
- Continue to cook onions stirring frequently until the vinegar reduces and the onions are golden brown.
- Layer bread with cheese and caramelized onions sandwiching onions between the cheese. The cheese is the glue to the sandwich so make sure it's flush against the bread on each side.
- In a heated skillet, melt a pat of butter. Add sandwich to butter, cover, and grill each side on low heat until the cheese is partially melted and the bread is golden brown.
