With most of the ingredients like Bisquick (or any biscuit mix alternative) already in your pantry, these biscuits come together in a snap, making them the perfect addition to your brunch spread. The best part? Pineapples are in season, so you can enjoy their sweet and juicy flavor. The combination of the tender biscuit, the caramelized pineapple, and the warm, gooey compote is simply irresistible. Pineapple Upside-Down Biscuits
Ingredients
- 1 package of Bisquick Biscuit mix
- 2 tbs. sugar
- 1 tsp. cinnamon
- 1/2 c. water
- 3/4 c. Diced pineapple about 1-inch thick ring
- 1/3 c. brown sugar
- 2 tbs. butter
Instructions
- Preheat the oven to 425 degrees.
- Dice the pineapple.
- In a microwave-safe bowl, add the pineapple, cinnamon, brown sugar, and butter.
- Microwave for about a minute until the butter melts, and the pineapple softens.
- Add the sugar to the biscuit mix, then prepare according to package directions.
- Oil the muffin tin.
- Scoop enough pineapple mixture to cover the bottom. Add about a tablespoon (large dollop) of the biscuit mix.
- Spoon any remaining pineapple liquid over the top of the biscuits.
- Bake for 11 minutes or until an inserted toothpick comes out clean.
- Let cool, then enjoy.
