Pineapple Upside-Down Biscuits

Ingredients
  

  • 1 package of Bisquick Biscuit mix
  • 2 tbs. sugar
  • 1 tsp. cinnamon
  • 1/2 c. water
  • 3/4 c. Diced pineapple about 1-inch thick ring
  • 1/3 c. brown sugar
  • 2 tbs. butter

Instructions
 

  • Preheat the oven to 425 degrees.
  • Dice the pineapple.
  • In a microwave-safe bowl, add the pineapple, cinnamon, brown sugar, and butter.
  • Microwave for about a minute until the butter melts, and the pineapple softens.
  • Add the sugar to the biscuit mix, then prepare according to package directions.
  • Oil the muffin tin.
  • Scoop enough pineapple mixture to cover the bottom. Add about a tablespoon (large dollop) of the biscuit mix.
  • Spoon any remaining pineapple liquid over the top of the biscuits.
  • Bake for 11 minutes or until an inserted toothpick comes out clean.
  • Let cool, then enjoy.
