package of Bisquick Biscuit mix

tbs.
sugar

tsp.
cinnamon
1/2
c.
water

c.
Diced pineapple
about 1-inch thick ring
1/3
c.
brown sugar

tbs.
butter
Instructions
Preheat the oven to 425 degrees.
Dice the pineapple.
In a microwave-safe bowl, add the pineapple, cinnamon, brown sugar, and butter.
Microwave for about a minute until the butter melts, and the pineapple softens.
Add the sugar to the biscuit mix, then prepare according to package directions.
Oil the muffin tin.
Scoop enough pineapple mixture to cover the bottom. Add about a tablespoon (large dollop) of the biscuit mix.
Spoon any remaining pineapple liquid over the top of the biscuits.
Bake for 11 minutes or until an inserted toothpick comes out clean.
Let cool, then enjoy.
