Cucumber Tomato Salad

Rome tomatoes, cubed

red onion

Can of chickpeas

Instructions
Prepare falafel according to package directions.
Mix salad ingredients and set aside. Let marinate for at least an hour.
Start food processor on purèe. Slowly add chickpeas and garlic cloves and blend until smooth.
Add lemon juice to food processor. Slowly add olive oil, then tamari and continue to blend until it reaches desired consistency.
