Pickled Daikon and Carrots

4 oz. linguine
1/4 cup olive oil
half a bulb of garlic, diced
1 tsp. red pepper flakes
3/4 c. of chestnut mushrooms
1/2 tsp. salt
1/3 c. finely chopped parsley
juice of one lemon

 

1. Cook pasta in slightly salted water.
2. Sauté garlic in olive oil.
3. Add red pepper flakes in chestnut mushrooms until mushrooms tenderize.
4. Add linguine to mushrooms with 1/3 cup pasta water.
5. Sauté pasta with mixture until water is cooked down.
6. Add lemon juice and parsley.
7. Sauté for five minutes.
8. Serve.
